Quick Carrot/Cauliflower Pickle


    • Vegetables:
      • 1-cup carrots, cut into roughly 3" thin strips
      • 1½--cup cauliflower florets 
    • Spices:
      • 1- tbs crushed mustard seeds
      • 2-tbs turmeric
      • 2-tbs red chilly powder
      • salt depending on your taste
      • ½-tsp  asafoetida

    • Additional Spices for Roasting:
      • 2- tbs coriander seeds
      • 1-tsp fenugreek seeds
      • 1-tbs cumin seeds
      • 1-tbs sauf (fennel seeds)
      • 1-tbs ajwaine (nigella seeds)

  1. Microwave carrots and cauliflower florets for 5 to 6 minutes
  2. Strain the excess water and spread the carrot and cauliflower on a towel paper.
  3. Heat the pan, put all  the spices for roasting  and grind it .
  4. In a mixing bowl put half cooked carrot, cauliflower florets, grind powder, and all spices (excluding the roasting spices)
