Nutrition of Daal (Lentils) and Taste of Green Curry: “Nimona”

“Nimona” is very popular recipe of Uttar Pradesh state of India. Its main ingredients are fresh green peas paste , potatoes and cauliflower and thus it is full of protein and goes very well with plain rice or jeera rice. It can be a great replacement for Daal (lentil) for taste change without impacting nutrition.


Ingredients:
  • 1- medium size potato
  • 1-cup coarsely ground green peas
  • ½-cup green peas
  • 100gm- cauliflower(cut in medium chunks)
  • 4-tbs mustard oil or vegetable oil
  • 1-tsp cumin seeds
  • ½-tsp asafoetida (hing)
  • 1-medium size finely chopped onion
  • 1½-tbs ginger-garlic paste
  • 1-medium size chopped ripe tomato
  • 1½ -tbs garam masala (curry powder)
  • ½-ts red chilly  powder
  • ½-ts turmeric powder
  • 1-tbs chopped coriander leaves
  • 1-cup water
  • salt to taste
Instruction:
  •  Grind the peas to make 1 cup paste.
  • Shallow fry the cauliflower and potato pieces in 1tbs oil.
  • keep both the items aside
  • Now put remaining oil in the pan, add cumin seeds and asafoetida (hing). When cumin seeds start crackling, add chopped onion, salt and ginger garlic paste. When paste turns golden brown, add chopped tomato, garam masala, red chilly powder, turmeric powder and green peas paste. Saute till oil starts separating from the paste and then add water, cauliflower, potato and green peas.
  • Cover with the lid and let it simmer for 10-15 min
  • Nimona is ready. Garnish with coriander (cilantro) leaves.
